Delicious Chicken Schnitzel Recipe
4 thin slices skinless boneless chicken breast
2 eggs, beaten
1/4 teaspoon paprika
1/4 teaspoon pepper
1/4 teaspoon parsley flakes
Salt by taste
Panko bread crumbs
Italian style bread crumbs
Olive oil for frying (or kind you like)
Trim chicken breast by cutting off the fat from the sides. Place the chicken on the cutting board and pound them thin with a meat hammer on both sides. They should be significantly larger in size after pounding.
In a medium bowl mix eggs. Add salt, pepper, paprika and parsley to the eggs and mix again. Put chicken in the egg mixture. Let them sit in it for at least 30 minutes covered in the refrigerator.
Meanwhile, if you want you can make some mashed potatoes or some delicious veggie sides (on the picture shown are stir fried peppers and mashed potatoes) to serve with the Schnitzels. Or you can serve them with fresh salad.
When ready, in a large frying-pan heat oil.
Put Panko bread crumbs and Italian bread crumbs on the plate (about 1/2 cup of each add more as needed). Take each Schnitzel out of the egg mixture and cover it generously with bread crumbs.
Fry the Schnitzels about 3 to 5 minutes on each side. This makes four servings and the nutrition facts are for the Schnitzel only without the sides.
