Teriyaki Shrimp Stir Fry
Ingredients:
2 cups cooked linguine pasta
1 medium carrot, cut in thick matchsticks
1 cup sugar snap peas
1 red bell pepper, cut in strips
1 cup canned baby corn, drained and washed
1 cup mushrooms, sliced
20 medium size shrimps, cooked (thawed if frozen)
1 tablespoon olive oil
1/4 cup Teriyaki sauce
1/4 teaspoon dry parsley flakes
Dash or two garlic powder
Dash or two paprika
Salt and pepper to taste
(Optional – Pinch or two red pepper flakes)
Directions:
Cook pasta according to the package, when done drain and set aside. Drain, wash, peel and cut vegetables. If using frozen shrimps thaw them according to the package. Or if using fresh follow the instructions HERE!
In a large skillet over medium/high heat add olive oil and prepared vegetables. Stir fry the veggies until they start to soften and become flavorful. You don’t want to over cook your veggies, they are supposed to have some crunch in them. Cook them about 5 to 10 minutes.
Add in pasta and shrimps, lower the heat to medium/low and mix everything together adding in seasonings and Teriyaki sauce. Cook additional 4 to 5 minutes mixing constantly so that the sauce and seasonings can spread evenly over the ingredients.
Serve right away on its own or with a tablespoon of sour cream per serving. Makes 4 servings.
