Coconut Cocoa Cookie Balls


Delicious Bite Size Cookie Treats

These delicious bite size cookies are perfect treat full of flavor. They go perfectly with coffee, tea or milk.

Coconut Cocoa Cookie Balls


1 box (408 g) of Honey Graham Crackers, finely ground (or you can use other flavors: chocolate, cinnamon or original)

2 sticks unsalted butter, softened

1/2 cup powdered sugar

2 tablespoons cocoa

1 teaspoon pure vanilla extract (you can also put 1/2 teaspoon of rum extract if you desire)

Coconut Flakes (for rolling the cookie balls in, you can substitute this with chocolate flakes if you prefer)


In a large bowl combine ground graham crackers, sugar, cocoa, vanilla extract (rum if you are using it) and softened butter. Mix well with a large spoon or by hand until all the ingredients are mixed evenly and you get a smooth texture.

Taking small amounts of cookie dough, make balls with your hands and roll each in the coconut flakes (or chocolate). Place in the refrigerator for an hour to cool before serving.

Keep in an airtight container in the refrigerator for up to a week. If too hard leave them on the counter for about 10 minutes before serving. This recipe makes between 3 and 4 dozens.
