Quick and Easy Peanut Butter Cookies

This quick and easy recipe for peanut butter cookies has only four ingredients. There is no flour and no butter. They are very soft, chewy and perfect for kids and grownups.

Peanut Butter Cookies (No Flour – No Butter)

Ingredients:

1 cup peanut butter, smooth kind

1 cup granulated sugar (plus 1 tablespoon for dipping fork later)

1 large egg

1 teaspoon pure vanilla extract

Directions:

Preheat the oven to 350F. Line a large baking sheet with parchment paper.

In a medium mixing bowl combine peanut butter, sugar, egg and vanilla extract. Mix everything with a fork until combined. Roll the dough into small balls (you should be able to make 20 cookies). Place each cookie ball onto prepared baking sheet. Take additional sugar (1 tablespoon) and a fork. Dip fork in sugar to prevent sticking and press a crisscross design on each cookie.

Bake for about 10 to 12 minutes. Remove from the oven and let them cool on the baking sheet for a minute or so before removing. This recipe makes 20 cookies. Serving size is one cookie.
