Perfect Pizza Recipe
Perfect blend of fresh veggies and Feta cheese on a delicious homemade pizza dough.
Pizza with Veggies and Feta
- For the Pizza Dough:
2 cups all-purpose flour
1 cup warm water
1 teaspoon active dry OR instant yeast
1/2 teaspoon salt
1 tablespoon olive oil (plus more for drizzling the bowl)
- For the Pizza Toppings:
2 tablespoons pizza sauce OR other favorite tomato based sauce
Drizzle or two of olive oil
2 cups fresh spinach, chopped
1 cup Sweet Mini Peppers, cut in circles
1/2 cup Feta cheese, crumbled
Sprinkle yeast over warm water. In a mixer, combine flour and salt. With the mixer running on low-speed, with paddle attachment, drizzle in olive oil until combined with flour. Next, pour in yeast and water mixture and mix until just combined.
Coat a medium mixing bowl with a light drizzle of olive oil and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and store in the fridge until you need it. You can make the dough the night before and keep it in the fridge overnight, the dough will be good for up to 4 days in the fridge. If you are making it the same day, keep it in the fridge for at least 3 to 4 hours before use.
Preheat oven to 400F. Stretch pizza dough on your baking pan (we always use nonstick round pizza pan). The dough will be very thin. Lightly drizzle olive oil on the dough, add pizza sauce and spread it nicely with a spoon. Next add chopped spinach, peppers and Feta cheese.
Bake for 15 to 20 minutes, or until crust is golden brown. Remove from pan, cut and serve immediately!
