Perfect Pasta Dish Recipe
Pasta can make a perfect meal. You can dress it up or down, make it cold or hot, serve it any way you like. This is one of our favorite recipes that is perfect when served hot or cold.
Edamame Pasta Dish
2 cups Cellentani Barilla pasta, cooked (or other pasta of choice other than spaghetti)
1 cup Edamame, cooked
1 medium green bell pepper, chopped
1 medium carrot, cut in tiny slices
1 teaspoon olive oil
1/4 teaspoon parsley flakes
Dash or two dry basil
Dash or two Cajun pepper (optional)
Salt and pepper to taste
Cook pasta according to the box. When done drain and set aside. Cook edamame according to the package, drain and set aside.
In a medium skillet heat olive oil over medium/high heat. Add in cut up carrots and peppers. Saute veggies for about 5 minutes mixing occasionally to prevent sticking or burning. Add in seasonings, mix and lower the heat to medium. Saute everything for a few more minutes or until carrots start to be soft and peppers flavorful.
Add cooked edamame and pasta to it and mix everything over medium/low heat. Serve warm as a pasta dish or cold as a pasta salad.
