Yummy Broccoli Macaroni and Cheese Recipe
This colorful dish is very easy to make and perfect for lunch or dinner.
Broccoli Macaroni and Cheese
2 cups broccoli florets, steamed or cooked in water
2 cups penne pasta
1 tablespoon unsalted butter
1 tablespoons all-purpose flour
1 cups low-fat milk
Pinch black pepper
Salt to taste for pasta water
Pinch cayenne pepper (optional)
1 cup shredded mild cheddar cheese
1 cup shredded mozzarella cheese
In a pot of boiling, salted water cook the pasta to al dente. Either cook broccoli or steam it, when done set aside.
While the pasta is cooking, in a separate pot, melt the butter over medium heat. Stir in the flour and cook gently for about a minute. Whisk in the milk, salt, pepper and cayenne. Bring milk mixture to a simmer, reduce the heat and cook for about 5 minutes until mixture thickens. Stir in two-thirds of the cheese until it has melted (save remaining cheese for the top while baking). Remove saucepan from heat and set aside.
In oven-proof dish, combine the pasta with the cheese sauce. Sprinkle remaining cheese over the top and broil for about 3 minutes, until cheese begins to bubble. Or bake for about 30 minutes, or until the cheese begins to bubble.
Remove from oven and rest for five minutes before serving. Serve together with cooked/steamed broccoli.
