Chicken Hot Dogs with Veggies

Ingredients:

2 Trader Joe’s Uncured Chicken Hot Dogs, cut in bite size pieces

1 teaspoon olive oil

2 long green peppers, cut in pieces

1 small zucchini, peeled and cut in circles

1 medium carrot, peeled and cut in bite size pieces

1/2 teaspoon dry parsley flakes

1/4 teaspoon crushed red pepper

1/4 teaspoon garlic powder

Salt and pepper to taste

Chicken Hot Dogs with Veggies Recipe

Directions:

Wash, peel and cut all the ingredients. Add oil to a medium skillet and heat it over medium heat. Add in all of the ingredients and cook like you would a stir fry mixing occasionally to prevent sticking and so that everything can cook evenly.

When veggies start to be soft and flavorful and chicken hot dogs start to brown on both sides add in salt, pepper, parsley, garlic and crushed red pepper. Note: You can also use fresh garlic and fresh parsley.

Cook additional 2 to 3 minutes. Serve right away on its own, with sour cream, in tortilla wraps or anyway you like! Makes about two servings.
