Healthier way to enjoy Chicken Nuggets
Making your own chicken nuggets is so easy and so much healthier. Here is a quick and easy recipe you will love!
Baked Chicken Nuggets
3 boneless, skinless chicken breasts, cut in (nuggets like) pieces similar in size
1/4 cup Panko breadcrumbs
1/4 cup plain breadcrumbs
2 tablespoons Parmesan cheese, grated
2 eggs, beaten
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon parsley
Salt and pepper to taste
Preheat oven to 400F. Spray a large baking sheet with cooking spray, set aside.
In one medium bowl combine Panko breadcrumbs, plain breadcrumbs and Parmesan cheese. In another bowl beat eggs, add in garlic powder, paprika, parsley, salt and pepper.
Remove fat from the chicken, cut in pieces. Put chicken pieces in the egg mixture. Cover with plastic wrap and let it marinate for about 10 to 15 minutes in the fridge.
Take chicken from the egg mixture. Put a few pieces of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet. Lightly spray the top of the chicken with cooking spray.
Bake chicken nuggets for about 8 to 10 minutes. Take out and turn pieces on another side and bake an additional 10 minutes or until cooked though.
Serve with ketchup or your favorite dipping sauce!
