Sauerkraut with Sausages and Potatoes

Ingredients:

1 bag of sauerkraut (you can use sauerkraut from a can or jar as well)

1 package of smoked pork  sausages, cut in pieces (you can also use beef sausages or your favorite kind)

2 tablespoons vegetable oil

1/4 teaspoon smoked paprika

1/4 teaspoon garlic powder

1/2 teaspoon parsley flakes (or use fresh parsley finely chopped)

Salt and pepper to taste

4 potatoes, boiled and cut in slices

Directions:

Wash potatoes with skin on. In a large pot boil the potatoes whole. When done, take out of the water, cool and remove skin.

Cut sausages. In a large, deep skillet over medium heat add oil and sausages. Cook sausages until they start to brown on the sides and start to release the flavor.

Add in sauerkraut, mix with sausages. Reduce heat to medium/low. Add in seasonings and cook until sauerkraut starts to soften and decreases in size about 15 minutes mixing occasionally.

Serve sauerkraut and sausages with sliced potatoes. Store leftovers covered in the refrigerator.
