Meatball Sub Sandwich Recipe

Meatball Sub Sandwich

  • For the Meatballs:

1 pound lean ground beef

1 egg, lightly beaten

1/4 cup plain breadcrumbs, plus more for rolling meatballs in

1/2 teaspoon Italian seasoning

1/2 teaspoon paprika

1/2 teaspoon dry parsley

1/2 teaspoon garlic powder

Salt and pepper to taste

Cooking spray (for baking)

  • For the Sauce:

2 tablespoons olive oil

1 cup tomato sauce

1/2 cup water

1/2 teaspoon garlic powder

1/2 teaspoon Italian seasoning

Salt and pepper by taste

  • For the Sandwiches:

Sandwich rolls

Mozzarella cheese slices

In a large bowl combine ground beef, egg, seasonings and breadcrumbs. Mix everything well until combined. Form meatballs by rolling meat mixture between your palms until you have a round ball. Roll each meatball in breadcrumbs. Repeat with remaining meat mixture.

Take a large baking sheet and spray it with cooking spray. Put meatballs on the sheet in a single layer about inch apart. Bake in preheated oven on 400F for about 15 to 20 minutes, turning them once mid baking.

Start making the sauce by heating olive oil over medium heat in a large, deep pan. Add in baked meatballs one next to another in a single layer. Cook for about 1 minute or so than turn meatballs. Add tomato sauce and water. With a wooden spoon scrape the bottom of the pan to get the flavors going. Cook for about 5 minutes, than add in seasonings. Lower the heat to low and cook until sauce is ready mixing and turning meatballs occasionally.

When ready, cut sandwich rolls (or bread of choice) add sauce to the bottom and meatballs over it. Add additional sauce over the meatballs and top with Mozzarella cheese slices.

Serve right away with salad on the side or as is.
