Chicken in Red Sauce over Rice


  • For the Rice:

1 cup of rice, uncooked

6 cups of water

1 tablespoon olive oil

Salt and pepper or seasoning of choice to taste

  • For the Chicken in Red Sauce:

2 boneless, skinless, chicken breast, cut in pieces

2 tablespoons olive oil

1 cup tomato sauce

2 tablespoons tomato paste

2 cups of water

1/2 teaspoon parsley flakes

1/2 teaspoon smoked paprika

1/4 teaspoon garlic powder

Salt and pepper to taste

Chicken in Red Sauce over Rice Recipe


Cook rice in a large pot with plenty of water. Six cups of water to one cup of rice. When rice is done, carefully drain the water, let rice sit in the mesh colander for a few minutes before returning it to the pot.

Add olive oil and seasoning to the rice and gently mix/fold it so that everything is distributed equally. Set aside rice in the pot covering it half way.

Wash and dry chicken breast. Remove all excess fat and cut chicken in pieces.

In a large, deep skillet heat olive oil over medium heat. Add in chicken pieces. Cook chicken until all sides turn white.

Add in tomato sauce and tomato paste. Mix and add 1 cup of water (saving another cup for later). Mix and cover the pan (half way or so) and lower the heat to medium/low. Cook chicken until sauce starts to thicken and bubble.

Uncover and add in remaining cup of water and seasonings. Mix, cover the same way as before and simmer until sauce thickens again.

When done serve Chicken in Red Sauce over Rice or mashed potatoes if you prefer it more.
