Crispy Whiting Fish Fillets with Garlic Tomatoes
Beautiful whiting fillets, made crispy to a perfection served on a salad with aromatic garlic tomatoes over it. Dish that is perfect for any occasion big or small.

Whiting with Garlic Tomatoes
Ingredients:
- For the Fish:
2 Whiting fish fillets
1 large egg
1/2 cup of plain breadcrumbs
1/4 cup all-purpose flour
1 tablespoon cornmeal
Salt and pepper to taste
Olive oil for frying
- For the Garlic Tomatoes:
1 pint cherry or grape tomatoes, cut in half
1 teaspoon parsley flakes
1/2 teaspoon garlic powder
1 tablespoon olive oil
Salt and pepper to taste
- To Serve:
2 romaine lettuce leaves
Fresh lime slices

Directions:
In a medium bowl mix egg, salt and pepper. Put fillets in the egg mixture and let it marinade for a few minutes while you mix the breeding. In a large plate mix together breadcrumbs, flour and cornmeal. Take fish out of the egg mixture and coat it generously with the breeding on all sides. Heat olive oil in a large skillet and fry fish fillets for about 2 to 3 minutes per side or until they are white and flaky on the inside and golden on the outside. When done let them drain on the paper towel lined plate while you make the tomatoes.
In a separate large skillet over medium heat, add olive oil. Add grape tomatoes cut in half and lover the heat to medium/low. With a wooden spoon or spatula mix tomatoes around in the oil. Add in garlic powder and parsley flakes. Mix well pressing tomatoes slowly so that they can absorb the flavors and cook better. Add in salt and pepper, cook for about minute or two longer.
To serve, on a plate lay one romaine lettuce leaf, place fish on top of it and scoop garlic grape tomatoes over fish. Add lime slices and serve.
