Quick and Easy Cabbage Soup Recipe
This Savoy Cabbage Soup is one of our favorite Quick and Easy Recipes. It is light, delicious and good for you!

Savoy Cabbage Soup
Ingredients:
6 cups of water (water will reduce with cooking add more is needed)
1 teaspoon canola oil
1 small head of Savoy cabbage, cored and coarsely chopped
1 cup cauliflower florets
4 medium carrots, cut in bite size pieces
1 cup cut sweet peppers (green, red, orange, yellow your choice)
1 teaspoon dry parsley flakes
1/4 teaspoon dry oregano
1/4 teaspoon (even less go by taste) fresh ground pepper
1 tablespoon Mrs. Dash Table Blend

Directions:
In a large stock pot saute carrots and peppers in canola oil over low heat. Add in Savoy cabbage and saute all together for about 10 minutes over low heat or until carrots start to soften and peppers and cabbage start to be fragrant.
Add in water, mix everything well and turn the heat to medium. Cook another 10 to 15 minutes and when the water boils add in cauliflower florets, parsley, oregano, pepper and Mrs. Dash seasoning. Mix and reduce heat to medium/low.
Let simmer for 20 minutes stirring occasionally. When veggies are all soft, turn off the heat and let soup sit on the stove covered for additional 10 to 15 minutes before serving.
Ladle soup into bowls and serve with bread or on its own.
