Pasta dishes are so easy to make and you can use so many ingredient combinations to make it as special as you want.
Elbow Pasta with Carrots and Tomato
2 cups elbow pasta, cooked
1 teaspoon olive oil
1 medium carrot, thin sliced
1 large tomato, chopped
1/2 teaspoon dry parsley
1/4 teaspoon dry basil
Salt and pepper to taste
Cook pasta according to the box, when done drain and set aside.
In a medium skillet heat olive oil over medium high heat. Add in carrots and cook until they start to brown and soften, mixing to prevent sticking. Add in tomato and cook additional 4 to 5 minutes, or until tomatoes form a nice sauce. Reduce heat to medium. Add seasonings, mix and add cooked pasta. Mix everything to combine and cook for a few minutes longer.
Serve as is or with cheese of choice on the top.
