Easy Lunch Idea Chicken Veggie Medley
This delicious lunch idea has it all – chicken, veggies and it’s very light. Perfect for spring and summer months.
Chicken Veggie Medley
1 teaspoon olive oil
2 boneless skinless chicken breasts, cut in bite size pieces
2 medium carrots, peeled and cut in bite size pieces
1 zucchini, peeled and cut in circles
1 medium tomato, diced
1/4 teaspoon dry parsley
1/4 teaspoon dry basil
Dash or two of paprika
Salt and pepper to taste
In a medium skillet heat olive oil over medium/high heat. Add in cut up chicken pieces. Saute chicken for a few minutes than add in carrots. Cook until carrots start to soften and chicken is white on all sides. Add in zucchini and cook additional 10 minutes or so. Add in tomato and seasonings, mix everything and cook additional few minutes so that flavors can distribute evenly.
Serve on its own, or with bread, or sour cream on the side.
