We recently received this cookbook for a review and what got us interested from the start is the low sodium recipes that take just 15 minutes to make. With 500 recipes you sure will have plenty to choose from for any kind of meal and best of all they are all low sodium.
Many people think that low sodium cooking will be difficult and that their food will not taste as good. But in reality the food tastes better, more natural and it’s so much healthier. With our recent diet changes we are always on the lookout for better and healthier food even if sometimes that means longer preparation. But this cookbook not only offers 500 low sodium recipes, it also cuts on preparation.
What we love about this cookbook is how many different recipes there are from breakfast to dessert. We can make entire meals for 15 minutes start to finish. There is Fix-it-in-15 and Let-it-Cook meals also. There is this great section on 5-Minute Make-Aheads that makes cooking even easier and quicker. And with the nutritional breakdown we can track not only our sodium intake, but calories per serving as well.

We love pasta and this yummy Quick Fresh Tomato Sauce was so perfect that we couldn’t resist sharing it with all of you.
Penne Pasta with Quick Fresh Tomato Sauce
1 and 2/3 pounds (754 g) Roma tomatoes
1/4 cup (60 ml) olive oil
1 teaspoon finely chopped garlic
1/2 cup (20 g) finely chopped fresh basil
1 and 1/2 teaspoons dried oregano
Bring a large saucepan of water to a boil over high heat. With a small, sharp knife, remove the core of each tomato. Blanch the tomatoes in the water for 30 seconds, then lift them out with a slotted spoon. Peel off the skins. Cut each in half horizontally and scoop out and discard the seeds. Coarsely chop the tomato pulp.
In a large skillet, heat the olive oil over medium heat. Add the garlic and saute for about 1 minute. Add the tomatoes, raise the heat to medium/high and saute just until the juices thicken, about 5 minutes. Add the herbs and simmer for about 1 minute more.
This recipe makes 2 cups of sauce, about 4 servings. We served it over Penne pasta with some added Parmesan cheese. Everyone loved this sauce and we sure will make it again.

After being diagnosed with congestive heart failure more than 10 years ago, Dick threw himself into the process of creating healthy versions of his favorite recipes. A cook since the age of 12, he grows his own vegetables, bakes his own bread, and cans a variety of foods.
