Fireside Snack Mix

  • Makes 5 cups
  • Prep Time 10 min
  • Cook Time 20 min

Ingredients:

  • 3 cups square rice cereal
  • 1 cup pumpkin seeds
  • 1/2 cup unsalted peanuts
  • 2 Tbsp. Country Crock® Spread
  • 2 Tbsp. pure maple syrup
  • 2 tsp. low sodium soy sauce
  • 1 tsp. ground ginger
  • 1/2 cup raisins or chopped dried apricots

Directions:

  1. Combine cereal, seeds and peanuts in large bowl; set aside.
  2. Microwave Country Crock® Spread, maple syrup, soy sauce and ginger in small microwave safe bowl at HIGH until spread is melted, about 30 seconds. Drizzle over cereal mixture; toss to coat.
  3. Arrange in single layer on rimmed baking sheet and bake 20 minutes, stirring once, until mixture is golden brown.
  4. Let cool completely, then stir in raisins. Store in air-tight container.

 

Spicy Pumpkin Seeds

  • Makes 2 cups
  • Prep Time 5 min
  • Cook Time 20 min

 

Ingredients:

  • 2 Tbsp. Country Crock® Spread
  • 1 tsp. Worchestershire Sauce
  • 1/2 tsp. paprika
  • 1/4 tsp. ground cumin
  • 1/8 tsp. ground cayenne pepper
  • 2 cups pumpkin seeds

 

Directions:

  1. Preheat oven to 325°. Combine Country Crock® Spread, Worchestershire sauce, paprika, cumin, and cayenne pepper in medium bowl. Stir in pumpkin seeds.
  2. Arrange in single layer on rimmed baking sheet. Bake 20 minutes, stirring once, or until golden brown.
  3. Let cool completely. Store in air-tight container.

 

Pumpkin Pie Spiced Pumpkin Seeds

  • Makes 2 cups
  • Prep Time 5 min
  • Cook Time 20 min

Ingredients:

  • 1/2 cup firmly packed light brown sugar
  • 2 Tbsp. Country Crock® Spread
  • 1 tsp. pumpkin pie spice
  • 2 cups pumpkin seeds

Directions:

  1. Preheat oven to 325°. Combine brown sugar, Country Crock® Spread and pumpkin pie spice in medium bowl. Stir in pumpkin seeds.
  2. Arrange in single layer on rimmed baking sheet and bake 20 minutes, stirring occasionally, or until golden brown.
  3. Let cool completely. Store in air-tight container.

 

Harvest Topping

  • Makes 2 cups
  • Prep Time 5 min
  • Cook Time 20 min

Ingredients:

  • 1 medium apple, cored and chopped
  • 1/2 cup pumpkin seeds
  • 1/4 cup dried cranberries
  • 2 Tbsp. Country Crock® Spread
  • 1/8 tsp. allspice
  • 1/8 tsp. ground cayenne pepper

Directions:

  1. Preheat oven to 325`.
  2. Combine all ingredients in medium bowl. Arrange in single layer on rimmed baking sheet. Bake 20 minutes, stirring occasionally, until seeds are golden brown.
  3. Spoon over warm baked Brie and serve with crackers.
  4. Spread mascarpone cheese on sliced multi grain baguette and spoon Harvest Topping over top for a delicious snack.
  5. Serve over bed of greens and drizzle with balsamic vinaigrette.
  6. All of these recipes are made from Country Crock®, a buttery spread that’s a part of the good fat family and made with real, simple ingredients including delicious oils, purified water and a pinch of salt.
